Title: Workshop on tomography for understanding food structure

Description:

Imaging is one of the methods often used for the study of food structure, as it allows direct visualization of those characteristics that we seek to understand. Traditionally, microscopy is one of the most common techniques, especially as electron microscopy is more easily available than in previous decades, allowing for higher resolution and magnification. However, it usually requires specialized sample preparation (drying, staining, etc.), and usually offers a 2D image of a small region of the sample. In contrast, tomography only requires minimal preparation, can be performed at ambient conditions, and provides a 3D-visualisation of the sample with a large field of view.

For tomography, one can find “bench-top” equipment, which can provide enough information. However, there are times that larger facilities are needed when the required spatial or temporal resolution or amount of measurements cannot be attained within a reasonable experimental time under laboratory conditions. Moreover, new beamlines such as ForMAX (MAX IV, Sweden) or DIAD (Diamond, UK) allow for both tomography and SWAXS mapping measurements, which can be of help for understanding the structural variability within the sample in a range from mm to mm.

In this workshop, we will provide an introduction to tomography, to the ForMAX beamline, and more specialized techniques such as tensor tomography and SWAXS mapping, as well as provide examples of applications in food products.

We welcome people who have never done a tomography experiment to explore the possibilities that this technique opens for your research, as well as those who are interested in learning about further techniques that can enhance your current tomography studies.
